Each compartment holds eight 12″ x 20″ x 2-1/2″ pans and features a 60-minute timer to pace production, reduce bottlenecks, and keep tickets moving. Use it to rapidly cook vegetables, seafood, dumplings, and bulk sides while maintaining moisture and plate-ready texture.
Engineered for durability and cleanability, the DCX-16 pairs a 316 stainless steel interior with rugged 304 stainless steel construction. Removable pan supports and a drip trough simplify end-of-shift cleanup and changeovers between menu items. Four 6″ legs with adjustable flanged feet provide stable, secure installation in busy prep or cook lines.
Chefs and operators can stage separate batches in each compartment to manage peak demand, retherm hotel pans, or hold specialty items on their own timers.
