Three cooking methods—steam, convection, and combination—handle searing, steaming, and retherming, while four manual modes and an 86° to 500°F range adapt to diverse menus. An 8-speed reversing fan promotes even air circulation across every rack.
Maintain quality with the removable core temperature probe for accurate doneness checks. After service, a high-pressure wash hose and six automated wash modes with twin chemical tanks speed cleanup. USB storage and WiFi enable convenient program transfer to keep workflows standardized across shifts and locations.
