Sourvisiae® is a bioengineered Saccharomyces cerevisiae strain that produces high levels of lactic acid during a standard primary fermentation. This 500g bulk brick is the perfect solution for commercial breweries producing Gose, Berliner Weisse, and other tart ales without the need for kettle souring or bacterial inoculation. Sourvisiae provides a clean, refreshingly tart profile with the reliability and speed of a traditional ale yeast, significantly reducing production time and the risk of cross-contamination.
Brewery Recipe Tip: Sourvisiae produces acid very quickly; for the best flavor balance, consider blending it with a standard ale strain or adjusting your initial wort pH. Maintain a fermentation temperature between 68°F and 77°F. No separate “souring” phase is required—just pitch like a standard dry yeast and your beer will reach its target pH within 48-72 hours.
