Brewery Tip: S-04 is highly versatile and performs best at temperatures between 59°F and 68°F. For a cleaner profile, ferment at the lower end of the range. For a more traditional English character with slightly more esters, aim for 68°F. Rehydrating in sterile water at 85°F for 15 minutes ensures the highest viable cell count for a vigorous start.
